The Columbian burger ~ smoked mozzarella, cilantro chimichurri, roasted bananas

It’s like that early 90s sexy ballad, Wicked Games where a shirtless Chris Isaak crooned about Not wanting to fall in love as he shimmied his way on the beach with a supermodel, continuing with his faux heartache I never dreamed that I’d meet anyone like you.

That’s kind of how we feel about the out-of-this-world tasty burgers at The Cut, the now open hand-crafted burger joint in Irvine’s Westpark Plaza. Except, in lieu of a naked supermodel, we are wrapping our hands around these beautiful, juicy burgers made with a unique menagerie of ingredients that make our hearts melt.

We’d never dreamed that we’d meet any burger like you…

Chef Andrés Dangond creates mini handcrafted masterpieces in between two buns that push the mouthwatering limits of your everyday burger. Have you ever heard of roasted bananas on a burger? Dangond reminisces about the good ol’ days in Columbia where bananas and cheese were a tasty side dish. Flash forward to Irvine and Dangond is reimagining the same side dish for hangry foodies as a hamburger – just add cilantro chimichurri sauce!

Other wicked games the chef dishes out include an eye-popping poutine with fall-off-your-fork braised brisket, melty

french fries

Poutine Fries ~ braised brisket, mozzarella, cilantro chimichurri

mozzarella, and cilantro chimichurri. These fries are definitely for sharing unless you are feeling confident and extra hungry, which less face it, there is always room in the belly for poutine.

Here are our Top 5 Hits from The Cut:

  1. The Columbian Burger – because it’s Bananas, B.A.N.A.N.A.S. – so good! still dreaming about it!
  2. Poutine Fries (pictured right) – no need for an explanation. Come on!
  3. The Grand Cut – a signature patty, braised pork, bacon jam, aioli, and havarti & comte fondue. That melty cheese tho!
  4. Cheesy Tots – we dare you to eat just one!
  5. Croquettes – creamy prosciutto and chorizo croquettes, aioli, and mad sauce. Great with a glass of red wine.

The Cut is chef driven, handcrafted, fresh, and from scratch – just how Chef Dangond and his partners Charlie Burnette and Steve Kim envisioned this fab establishment. The design and layout of The Cut is fresh, modern, and definitely instaworthy with a light, dreamy color palette which makes for a perfect backdrop for stand-out burgers.

Corn Cookie Ice Cream Sandwich – vanilla bean ice cream, dulce de leche sauce

All meat dishes are made with all natural and humanely raised meat such as Jidori chicken, Vande Rose Duroc Pork, Angus Beef Brisket & Chuck. If you are vegetarian or vegan, The Cut can replace their meaty hamburgers with a Beyond Burger, plant-based, non-GMO patty with a whopping 20 grams of protein.

For dessert, don’t forget to dive your spoon into the Corn Cookie Ice Cream Sandwich made with vanilla bean ice cream and smothered decadently in dulce de leche sauce. It’s naughty, but everything in moderation, right?

This is definitely not a one-hit wonder. We are still dreaming of the incredibly tasty hamburgers, fries, those cheesy tator tots, and all the other dishes we still have yet to try.

The Cut has a wicked way of making you long to come back for more.

What a wicked thing to do, to make me dream of you…
